After doing some research, talking with MikeP, going to the camera store and watching two camera store geeks almost get into a slap fight over their opinions on Canon vs Nikon, I have settled on these:
Nikon D-80 (http://www.nikonusa.com/Find-Your-Nikon/Product/Digital-SLR/25412/D80.html)
70-300 VR ED Lens (http://www.nikonusa.com/Find-Your-Nikon/Product/Camera-Lenses/2161/AF-S-VR-Zoom-NIKKOR-70-300mm-f/4.5-5.6G-IF-ED.html)
28 - 70 VR ED lens (http://www.nikonusa.com/Find-Your-Nikon/Product/Camera-Lenses/1961/AF-S-Zoom-NIKKOR-28-70mm-f/2.8D-IF-ED.html)
Later I will get some reasonable quality prime and a good macro for shooting close ups of bike parts and so on.
I got local pricing and it is not substantially different than I am finding on the internet. Time to check out fleabay.

I've read a lot of the book but they have apparently made a mistake as a good portion of it is in Greek.

Nice choice Mike! I'm still regretting not spending the extra money on the d80!
Also, very jealous of the mountains!
